Main Ingredients- 800g fresh duck meat
- 1 medium carrot
- 1 Cheongyang pepper (or spicy green chili)
- 5 cloves garlic

- 5 Tbsp soy sauce
- 3 Tbsp oyster sauce
- 3.5 Tbsp oligosaccharide (or corn syrup)

Cooking Instructions
Step 1
In a bowl, combine the 800g of fresh duck meat with all the seasoning ingredients: 1 Tbsp minced garlic, 5 Tbsp soy sauce, 3 Tbsp oyster sauce, and 3.5 Tbsp oligosaccharide. Mix well to ensure the marinade coats the duck evenly. Cover the bowl with plastic wrap and let it marinate in the refrigerator for at least 30 minutes to allow the flavors to deepen.
Step 2
While the duck is marinating, wash the carrot thoroughly and cut it into bite-sized pieces suitable for stir-frying with the duck. You can either mince the garlic cloves or slice them thinly for convenience. Having your ingredients prepped makes the cooking process much smoother.
Step 3
Preheat a non-stick pan over medium heat for about 20 seconds, ensuring no oil is added. Add the marinated duck meat to the hot pan and stir-fry over high heat for 5 minutes to sear the surface. Then, reduce the heat to medium and continue to cook for another 4 minutes. It’s crucial to stir and mix the duck frequently to prevent the sauce from burning. If you notice the sauce sticking or burning, immediately lower the heat to medium.
Step 4
When the duck meat is about 90% cooked, reduce the heat to medium-low. Add the sliced carrot and prepared garlic to the pan. Continue to stir-fry everything together for approximately 3 minutes, or until the carrots are tender-crisp and the garlic is fragrant. The vegetables will absorb the delicious flavors from the duck and marinade.
Step 5
Once all the ingredients are cooked through, turn off the heat and transfer the Carrot Duck Bulgogi to a serving dish. For a touch of heat and freshness, finely chop the Cheongyang pepper and add it right after turning off the heat, or stir it in just before serving. The crisp texture and spicy kick of the pepper will cut through the richness of the duck, making the dish even more delightful.
