Ingredients
  • 2 medium carrots
  • 3 sheets of square fish cake
  • 1 Tbsp minced garlic
  • 1 Tbsp brown rice oil or cooking oil
  • 2 Tbsp soy sauce
  • 1 Tbsp Korean soup soy sauce (or regular soy sauce if unavailable)
  • Salt to taste
  • A pinch of black pepper
  • A pinch of sesame seeds

Cooking Instructions

Step 1

First, wash the carrots thoroughly, peel them, and then julienne them into thin strips, about 0.3cm thick. It’s important to maintain some texture, so avoid cutting them too thin or too thick.

Step 2

Briefly blanch the square fish cakes in boiling water to remove excess oil. Rinse them under cold water and gently squeeze out any excess moisture. Then, julienne them into similar thickness as the carrots, making them easy to eat.

Step 3

Heat a pan over medium heat. Add 1 tablespoon of brown rice oil (or cooking oil) and 1 tablespoon of minced garlic. Sauté over low heat, being careful not to burn the garlic, until fragrant. It’s important to move to the next step quickly before the garlic turns brown to avoid a bitter taste.

Step 4

Once the garlic is fragrant, add the julienned carrots and fish cakes to the pan. Drizzle 2 tablespoons of soy sauce evenly over the ingredients. Stir-fry over medium-high heat to prevent too much moisture from releasing and to allow the flavors to meld well. (Tip: If you prefer a cleaner taste, you can simply season with salt instead of soy sauce.)

Step 5

Next, add 1 tablespoon of Korean soup soy sauce. This adds umami and deepens the color, but regular soy sauce can be used as a substitute. Taste as you stir-fry and, if it needs more seasoning, add a little more salt to adjust the overall taste. (Tip: Using only soy sauce might result in a less appealing color. Compensating with salt for the remaining seasoning is key to achieving both great color and taste. Using both salt and soy sauce together enhances the flavor.)

Step 6

Once all the ingredients are cooked and seasoned to your liking, turn off the heat. Finish by sprinkling a pinch of black pepper and some sesame seeds. (Tip: You can omit the pepper if you prefer, or add about 1/2 teaspoon of sesame oil for an extra nutty aroma and flavor.)
