  • 100g Cake Flour
  • 100g Walnut Powder
  • 3g Baking Powder
  • 1g Salt
  • 50g Soy Milk
  • 30g Grapeseed Oil
  • 40g Brown Sugar
  • 2g Vanilla Extract

Cooking Instructions

First, finely chop the 50g of California Walnuts. Aim for a texture that still has a slight chew rather than a powder, as this will add a pleasant bite to your biscotti.

In a large bowl, combine the 50g of soy milk, 30g of grapeseed oil, and 40g of brown sugar. Whisk or stir with a spatula until the brown sugar is completely dissolved. Ensuring the liquid ingredients are well combined will help prevent lumps in your dough later.

In a separate bowl, sift together the 100g of cake flour, 100g of walnut powder, 3g of baking powder, and 1g of salt at least 2-3 times. Sifting the dry ingredients not only removes lumps but also aerates them, contributing to a lighter and crispier biscotti.

Add the sifted dry ingredients to the bowl with the wet ingredients. Gently mix with a spatula until just combined – avoid overmixing. Once the dry ingredients are mostly incorporated, add the chopped walnuts and 2g of vanilla extract. Mix until no dry flour streaks remain. Be careful not to knead the dough; overworking it can result in tough biscotti.

Transfer the dough onto a baking sheet lined with parchment paper. Shape the dough into a long log, approximately 20cm (about 8 inches) in length, resembling a rustic loaf. Leave some space between the logs on the baking sheet, as they will spread slightly during baking.

Bake in a preheated oven at 160°C (320°F) for about 20 minutes. The logs should be lightly golden and set.

Remove the baked logs from the oven and let them cool slightly. While still warm, use a sharp knife to slice the logs into 1.5-2cm (about 0.6-0.8 inches) thick pieces. If the dough sticks to your knife, rinse it under cold water and dry it before continuing to slice for cleaner cuts.

Arrange the sliced biscotti back on the parchment-lined baking sheet. Return them to the oven, still at 160°C (320°F), and bake for an additional 15-20 minutes per side, for a total of 30-40 minutes. Baking at a lower temperature for a longer time ensures they become thoroughly crisp. Flip them halfway through to ensure even browning and crisping. You are looking for a deep golden brown color.
