Ingredients

  • 1/4 head of cabbage
  • 1/2 apple
  • 1 can of sweet corn
  • 1 stalk of green onion (scallion)
  • 1 pinch of coarse salt
  • 1 tbsp olive oil
  • 1 pinch of dried thyme (optional)
  • A pinch of freshly ground pepper

Cooking Instructions

First, thoroughly wash and prepare the cabbage and apple. Cut the cabbage into bite-sized pieces, about 2-3 cm. Core the apple and cut it into similar sized pieces as the cabbage. Avoid cutting them too small, as they might become mushy when cooked. Keeping a consistent size is key.

Open the can of sweet corn and drain the liquid completely. You can strain it or gently press it with a paper towel to remove excess moisture. This step prevents the vegetables from becoming watery and helps concentrate their flavor.

Trim the ends of the green onion and cut it into segments of about 3 cm. Cutting them into larger pieces, rather than finely chopping, will bring out their sweetness when baked and add a pleasant texture.

Now, lay out a sheet of parchment paper. Start by arranging the sliced apple on the bottom. The apple’s natural sweetness will infuse into the other vegetables as they bake. Next, layer the chopped green onions over the apples, and finally, pile the cabbage generously on top. Ensure the ingredients are layered evenly.

Sprinkle a pinch of coarse salt evenly over the layered vegetables. Salt helps to enhance the sweetness of the vegetables and adds a savory depth. Adjust the amount of salt to your preference. You can always add more later after tasting.
