First, the foundation of delicious fried rice is the rice! Wash 3 cups of ‘ChamDream’ rice (Gyeonggimi variety) thoroughly and cook it slightly drier than usual for perfect fried rice texture. Freshly cooked, warm rice will enhance the flavor profile significantly.

Cut the chicken breast into bite-sized cubes, about 1 to 1.5 cm. Uniformly sized pieces are best so they mix well with the rice and are easy for everyone, including children, to eat.

Prepare the vegetables for the fried rice. Finely mince or thinly slice the onion, and chop the carrot into small, diced pieces similar in size to the onion. Chop the chives finely. Smaller vegetable pieces will integrate better into the fried rice and provide a pleasant texture.

In a deep pan or wok, melt 1 tablespoon of butter over medium heat. Once the butter is melted, add the prepared carrots, onion, and chicken breast.
