Many people say that homemade baby potato dishes don’t quite capture the authentic taste of those found at Korean highway rest stops. But with the method I’m about to share, you’ll be amazed! This recipe creates butter-roasted potatoes that are so delicious, you’ll fall in love with them – even more than the ones you buy. Get ready for a flavor explosion!
Ingredients- Baby potatoes (small) 500g
- Unsalted butter 60g (approx. 2 slices)
- Salt 1 tsp
- Sugar 1 Tbsp
- Cooking oil 3 Tbsp

First, peel the baby potatoes thoroughly. After peeling, soak the potatoes in clean water for about 5 minutes. This helps to remove excess starch from the surface, resulting in a cleaner taste and texture.

It’s best to parboil the potatoes before roasting them in butter. Trying to cook them through solely with butter can be challenging. Place the peeled potatoes in a pot, cover them with water (enough to submerge them), and place the pot on the stove while the water is still cold. Bring to a boil and cook for 15 minutes. Important: Start timing the 15 minutes from when you place the pot on the stove with cold water, not from when the water begins to boil. If your potatoes are smaller, you might need slightly less time; if they are larger, a bit more time will be needed.
Step 3
Once the potatoes are tender, drain them well and transfer them to a frying pan. Add about 3 tablespoons of cooking oil. Using only butter to roast can cause it to burn easily. Therefore, combining cooking oil with butter is crucial for achieving a lovely golden-brown finish without burning. Now, add your two slices of butter (60g). I like to be generous with the butter, as it allows the rich, nutty flavor to really infuse into the potatoes, making them incredibly aromatic and tasty.
