Butter-Roasted Potatoes (Highway Rest Stop Style)

Ingredients
- 4 potatoes
- 1/2 Tbsp salt
- 3 Tbsp butter
- 2 Tbsp sugar
Cooking Instructions
Step 1
Wash the potatoes thoroughly and cut them into bite-sized pieces or your preferred size. Cutting them too small might cause them to break apart during cooking, so aim for a moderate size.
Step 2
In a pot, bring enough water to a boil and add 1 Tbsp of salt. Once boiling, add the cut potatoes and boil for about 7 minutes. The potatoes should be slightly undercooked, not fully tender. (You should feel a slight resistance when pierced with a fork).
Step 3
Drain the boiled potatoes in a colander and quickly cool them down under cold running water or in the refrigerator. This step firms up the surface of the potatoes, preventing them from falling apart during frying and helping them maintain their shape. It’s important for the surface to dry out somewhat.
Step 4
Heat a pan over medium-low heat. Add 3 Tbsp of butter, 2 Tbsp of sugar, and the remaining 1/2 Tbsp of salt. Stir gently as the butter and sugar melt, being careful not to burn the sugar. Once the sauce is melted and combined, add the cooled potatoes. Roast, flipping occasionally, until the surfaces are golden brown and appetizing. The butter and sugar coating will adhere to the potatoes, adding a delicious flavor.
