- Square fish cakes – 2 sheets
- Cucumber – 30g (about 1/4 medium)
- Pickled radish (Danmuji) – 30g (about 2 strips)
- Watermelon – 30g (or other fruit)
- Salt – 1 pinch (for stir-frying fish cakes)
- Sesame oil – a little (for stir-frying fish cakes and finishing)
Spicy & Sweet Bibim Dangmyeon Sauce- Gochugaru (Korean chili flakes) – 1.5 Tbsp
- Soy sauce – 1.5 Tbsp
- Minced garlic – 0.5 Tbsp
- Chopped green onion – 1 Tbsp
- Minced Cheongyang chili pepper – 1 Tbsp (adjust spice level)
- Oligodang (corn syrup) – 1 Tbsp (adjust sweetness)
- Plum extract – 2 Tbsp
- Mustard powder – 1/4 tsp (optional, for extra flavor!)
- Vinegar – 1 Tbsp
- Sesame oil – 1 Tbsp
- Toasted sesame seeds – 0.5 Tbsp
- Black pepper – a pinch
- Gochugaru (Korean chili flakes) – 1.5 Tbsp

Cooking Instructions
Step 1
First, let’s prepare all the ingredients for your Bibim Dangmyeon. Julienne the cucumber and pickled radish thinly. Cut the fish cakes into similar lengths. If using watermelon, you can cut it into small cubes or use a small cookie cutter to make decorative shapes. Set these aside.
Step 2
Now, let’s cook the dangmyeon. Bring a pot of water to a boil and add the dangmyeon. Cook for about 7 minutes until the noodles are tender and translucent. Drain them immediately and rinse briefly under cold water to maintain their chewy texture. Once drained, cut the dangmyeon a few times with scissors into manageable lengths and place them in your serving bowl.
Step 3
Time to make the star of the dish – the sauce! In a bowl, combine gochugaru (1.5 Tbsp), soy sauce (1.5 Tbsp), minced garlic (0.5 Tbsp), chopped green onion (1 Tbsp), minced Cheongyang chili pepper (1 Tbsp), oligodang (1 Tbsp), plum extract (2 Tbsp), mustard powder (1/4 tsp), vinegar (1 Tbsp), sesame oil (1 Tbsp), toasted sesame seeds (0.5 Tbsp), and a pinch of black pepper. Whisk everything together until well combined to create your delicious Bibim Dangmyeon sauce. You can adjust the amount of mustard powder to your preference or omit it entirely.
Step 4
Thinly julienne the prepared fish cakes, cucumber, and pickled radish. Prepare the watermelon into decorative shapes as mentioned earlier. Keeping the ingredients separate at this stage will make plating much easier.
Step 5
Heat a pan over medium-low heat. Add the julienned fish cakes along with 0.5 Tbsp of sesame oil and a pinch of salt. Stir-fry until the fish cakes are lightly golden and fragrant. This step enhances their flavor.
