Ingredients

  • 1 head of broccoli
  • 1 Tbsp white vinegar (for washing)
  • 1 Tbsp salt (for blanching)

Perilla Seed Dressing

  • 1 Tbsp soy sauce
  • 0.5 Tbsp tuna extract (or anchovy extract)
  • 1/3 Tbsp salt (or adjust to taste)
  • 1 Tbsp sesame oil
  • 2 Tbsp ground perilla seeds (the secret to nutty flavor!)

First, we need to prepare the broccoli properly to ensure it’s clean and fresh. Fill a bowl with plenty of water and add 1 tablespoon of white vinegar. Submerge the broccoli in this water for about 10 minutes. This soaking period helps to loosen and remove any dirt or debris hidden within the florets. After 10 minutes, rinse the broccoli thoroughly under cold running water several times.

Now, let’s blanch the broccoli. Bring a pot of water to a boil and add 1 tablespoon of salt. Once the water is at a rolling boil, carefully add the washed broccoli. Blanch it for exactly 1 minute. Be careful not to overcook it, as this can make the broccoli mushy and affect its texture! After 1 minute, immediately remove the broccoli and plunge it into an ice bath or rinse with cold water to stop the cooking process.

Once the broccoli has cooled, cut it into bite-sized pieces. Aim for pieces that are easy to eat in one bite. If they are too large, they can be cumbersome to handle.

Don’t throw away the broccoli stems! The stems are packed with nutrients like dietary fiber, and are often overlooked. Peel off the tough outer skin of the stem and chop it into similar bite-sized pieces as the florets. Including the stem adds extra nutrition and a varied texture to your salad.

In a bowl, combine 1 tablespoon of soy sauce, 0.5 tablespoon of tuna extract (you can substitute this with anchovy extract if you prefer), and 1/3 tablespoon of salt.
