A Simple and Healthy Diet Meal: Broccoli, Carrot, and Chicken Breast Scramble!
Thanks to my son starting his diet, I ended up buying a large pack of chicken breast, but I mistakenly bought the garlic flavor! So, I’ve been eating it myself, and in turn, I’ve started dieting too. This recipe combines the savory flavor of chicken breast with the freshness of vegetables, creating a satisfying meal that’s high in fullness and low in calories. It’s perfect for breakfast or a light lunch.
Main Ingredients- 1 pack Chicken Breast (approx. 200g)
- 1/3 Carrot
- 1 handful Broccoli (approx. 50g)
- 2 Eggs
Seasoning & Cooking Oil- 1 pinch Salt (adjust to taste)
- 1 Tbsp Olive Oil

Cooking Instructions
Step 1
First, prepare 1 pack of chicken breast. If you have pre-cooked chicken breast, it’s very convenient. Cut the chicken breast into bite-sized pieces (about 1-1.5cm). If you find chicken breast dry, boiling it with bay leaves or peppercorns can help remove any gamey odors.
Step 2
Peel the carrot and slice it thinly, then mince it finely. Trim the broccoli into bite-sized florets. Mincing both the carrot and broccoli finely ensures they cook at a similar rate to the chicken breast and are easier for children to eat. Blanching the broccoli beforehand can make it even more tender.
Step 3
Crack 2 eggs into a bowl and add a pinch of salt. Whisk the eggs thoroughly with a fork or whisk until well combined. Adjust the salt according to your preference and the seasoning of the chicken and vegetables.
Step 4
Heat 1 tablespoon of olive oil in a pan over medium heat. Add the chopped chicken breast, carrot, and broccoli. Stir-frying over medium-high heat helps retain the crispness of the vegetables. Cook for about 3-5 minutes until the vegetables are slightly tender. The carrots are almost done when they start to turn translucent.
Step 5
Once the vegetables are partially cooked, reduce the heat to medium-low. Evenly pour the whisked egg mixture over the vegetables. To make it easier to manage the egg cooking, you can gently push the vegetables to one side of the pan before pouring in the egg. Remember to reduce the heat *after* stir-frying the vegetables over medium-high heat; this prevents the eggs from burning and ensures they cook gently.
Step 6
As the eggs begin to set, gently stir and scramble them with a spatula or chopsticks, as if you were ‘scrambling’ them. It’s important to stir gently to prevent the eggs from sticking to the pan. Continue to mix until the chicken breast, vegetables, and eggs are evenly combined into a soft scramble.
