Main Ingredients- 2 cups young radish greens (approx. 200g)
- 1 stalk green onion
- 1 cup anchovy-kelp broth (200ml)
Seasoning- 1 Tbsp doenjang (fermented soybean paste)

Step 1
First, prepare the young radish greens by trimming any excess parts. Blanch them in boiling water briefly, then rinse under cold water to remove any impurities. Squeeze out excess water thoroughly. This step helps to remove any strong grassy flavor and ensures a cleaner taste.

In a large bowl, combine 1 tablespoon of doenjang, 2 tablespoons of minced garlic, and 3 tablespoons of perilla oil. Add the blanched young radish greens to the bowl. For a richer flavor profile, you can also add a tablespoon of gochujang (Korean chili paste), a teaspoon of gochugaru, or some perilla seeds.

Gently mix the greens with the seasoning using your hands, ensuring that all the leaves are evenly coated. Let the mixture sit for a few minutes to allow the flavors to meld and marinate the greens.

Transfer the marinated greens to a pot. Pour in 1 cup of anchovy-kelp broth (or rice water) to cover the greens. Simmer over medium-low heat, rather than high heat. This slow cooking process will tenderize the greens and allow the flavors to deepen.
