First, let’s bring out the nutty flavor of the small anchovies. Heat a dry pan over medium-low heat and toast 1 cup of dried small anchovies without any oil for about 5 minutes until they become crispy. After toasting, place the anchovies in a sieve to remove any crumbs or dust for a cleaner result.

Radish is especially delicious this season, so let’s enjoy it braised! Prepare 1 small Korean radish, peel it, and cut it into thick slices about 0.5 to 1 cm thick. Then, cut these slices into quarters, making them easy to cook with. (You should have about 3 handfuls).

Place the cut radish nicely in a wide pan with a shallow base. Now it’s time to add all the seasonings that will make the radish dish flavorful. Add 1.5 Tbsp red pepper flakes, 3 Tbsp soy sauce, 3 Tbsp rice wine, 1 Tbsp minced garlic, 1 Tbsp sesame oil, 0.5 Tbsp plum extract for sweetness, 1 Tbsp oligosaccharide, and a pinch of black pepper. Mix well to combine the seasonings. Slice the white parts of 1 green onion into large pieces and add them around the edges of the pan.

Now, pour in 2 cups of water and stir gently to ensure the seasonings are evenly distributed over the radish. Bring it to a boil over high heat, and once it starts bubbling vigorously, let it boil for a minute. This is a crucial step for the flavors to begin infusing into the radish.
