Ingredients

  • 1/2 Korean radish (about 500-600g)
  • 1/2 cup soy sauce (100ml)
  • 1 Tbsp red pepper flakes (gochugaru)
  • 1 tsp sugar
  • 1 tsp minced garlic
  • 1 handful green onions, chopped
  • 1 chili pepper (optional, diagonally sliced)

This braised radish is so delicious, whether served warm or cold! It’s a true ‘rice thief’ that will make you devour a bowl of rice in no time. You won’t need any other side dishes.

First, peel the radish thoroughly. Then, slice it into rounds about 0.5 to 0.7 cm thick. Arrange the sliced radish in a pot, covering the bottom. This helps the seasoning penetrate evenly.

Pour 1/2 cup (100ml) of soy sauce over the radish slices. The soy sauce will infuse the radish with its savory and umami flavors.

Next, add 1 tablespoon of red pepper flakes for a touch of spiciness. If you enjoy heat, feel free to add a little more.

Add 1 teaspoon of minced garlic and 1 teaspoon of sugar. Gently mix the seasonings with the radish. The sugar will enhance the radish’s natural sweetness and balance the saltiness of the soy sauce.

Now, add enough water to generously cover the radish. This prevents the radish from burning and ensures it cooks evenly. Scatter a handful of chopped green onions on top. If you like, you can also add diagonally sliced chili peppers (red or green) for extra color and flavor. Bring the pot to a boil over high heat.

Reduce the heat to medium-low and simmer until the radish is tender and the liquid has reduced to a thick sauce. Gently shake the pot occasionally or stir with a spatula to prevent sticking. As the sauce thickens, the flavors become more concentrated and delicious.

Once the sauce has reached your desired consistency, your delicious braised radish is ready! It boasts a deep, savory flavor comparable to braised fish. Served over rice, it’s absolutely delightful. Enjoy it warm, or chilled for a wonderfully chewy texture and intensified flavor.
