  • 600g Pork (cut for braising or bulgogi)
  • 1 Apple (choose a firm, large variety)

Pork Marination

  • 5g Salt (approx. 1/2 tsp)
  • 5g Ground Black Pepper (approx. 1/2 tsp)
  • 1 Tbsp Cheongju (rice wine)

Cooking Instructions

First, cut the 600g of pork into bite-sized pieces (about 3-4cm). In a bowl, combine the pork with 5g of salt, 5g of black pepper, and 1 Tbsp of Cheongju. Mix well by gently massaging. This marination helps remove any porky odor and makes the meat more tender. Let it marinate for about 30 minutes for best results.

Now, let’s make the sauce. In a small bowl, combine 5 Tbsp of soy sauce, 3 Tbsp of vinegar, 2 Tbsp of plum extract, 5 Tbsp of mirin, and 1 Tbsp of sugar. Stir thoroughly until the sugar is completely dissolved. This sauce is the key to making the pork and apples deliciously braised.

Wash the apple thoroughly. The most important step is to remove the core. Cut the apple into quarters, then use a knife or spoon to scoop out the core from each quarter. Afterward, cut the prepared apple into 8-10 wedges. Be careful not to cut them too small, as they can become mushy while cooking.

Now, let’s start cooking. Heat a wide frying pan over medium heat. Add the marinated pork and sear it until the surface is golden brown. Searing the pork first helps to lock in the juices, making it more moist and flavorful.

Once the surface of the pork is cooked and the juices are sealed, add the sliced apples to the pan alongside or on top of the pork. Sauté them together with the pork for about 2-3 minutes. The apples will start to release their sweetness as they cook.

Reduce the heat to medium-low and let it simmer, stirring occasionally, until the sauce thickens and coats the pork and apples beautifully.
