Main Ingredients
  • 100g Braised Pork Belly (leftover)
  • 100g Aged Kimchi (well-fermented)
  • 1 stalk Green Onion

Cooking Instructions

Step 1

Rinse the aged kimchi under cold water to remove excess brine and any strong odor. Gently squeeze out any excess liquid, but be careful not to wash away all the delicious sourness. Cut the kimchi into bite-sized pieces, about 2-3 cm wide.

Step 2

Heat 1 tablespoon of cooking oil in a pan or pot over medium-low heat. Add the chopped aged kimchi and minced garlic. Stir-fry for about 3-5 minutes until the kimchi softens and its sourness mellows, developing a richer flavor.

Step 3

Once the kimchi is well sautéed, add the sliced braised pork belly to the pan. Stir-fry everything together, ensuring the pork is coated with the kimchi and seasonings. Pour in 1/2 cup of broth (or water). Stir in 2 tablespoons of shiitake mushroom powder for an extra boost of umami, and add the roughly chopped green onion. Increase the heat to medium-high and stir-fry until the liquid has reduced to a glossy sauce.

Step 4
