Ingredients
  • 5 Button mushrooms
  • 1 handful Carrots (approx. 50g)
  • 1 Tbsp Olive oil
  • Pinch of Sesame seeds

Seasoning
  • 1 Tbsp Soy sauce
  • 1/2 Tbsp Honey (or corn syrup)
  • 1/2 Tbsp Cooking wine (Mirin)
  • 150ml Water

Cooking Instructions

Step 1

First, gently wipe the button mushrooms clean with a paper towel or a dry cloth to remove any dirt or debris. Trim off any discolored ends. Peel the carrots and cut them into bite-sized pieces, about 0.5cm thick, suitable for children. Heat 1 tablespoon of olive oil in a wide pan over medium-low heat. Add the sliced carrots and sauté, stirring occasionally to prevent sticking, until they start to soften slightly.

Step 2

While the carrots are sautéing, let’s prepare the delicious braising sauce. In a small bowl, combine 1 tablespoon of soy sauce, 1/2 tablespoon of honey (adjust sweetness to your child’s preference; corn syrup can also be used), 1/2 tablespoon of cooking wine (like Mirin, to remove any gamey smell and enhance flavor), and 150ml of water. Stir well with a spoon until the honey or sugar is fully dissolved.

Step 3

Once the carrots have softened slightly in the pan, add the cleaned button mushrooms, either whole or sliced into larger pieces (smaller pieces are good for kids), and sauté them together briefly. Pour in the prepared sauce. Bring the mixture to a gentle simmer over medium-low heat, stirring occasionally to prevent burning. Since mushrooms cook quickly, braise them for about 1-2 minutes per side, ensuring they are evenly coated with the sauce and don’t become too mushy. Cook until tender but still slightly firm.

Step 4

The dish is almost ready when the sauce has reduced and the ingredients look glossy. Test a piece of carrot by pressing it gently with a chopstick; it should yield easily. Once cooked to your desired tenderness, remove the pan from the heat. Transfer the delicious braised mushrooms and carrots to a serving dish. Sprinkle a pinch of sesame seeds on top for a nutty aroma and a beautiful finish. Enjoy your kid-friendly braised mushrooms in soy sauce!
