Ingredients
- 500g aged kimchi (well-fermented napa cabbage kimchi)
- 1/2 mackerel, cut into serving pieces
Cooking Instructions
Step 1
Chop the aged kimchi into bite-sized pieces, about 2-3 cm wide. Alternatively, if you prefer to shred the kimchi after cooking, you can leave it whole and tear it apart once it’s done in the rice cooker. The kimchi is already well-seasoned, so no additional seasoning is typically needed.
Step 2
Rinse the mackerel under cold water to remove any fishy odor, then pat it dry with paper towels. Cut the mackerel into four serving pieces. (Using pre-cut mackerel will save you time.)
Step 3
Place the chopped aged kimchi at the bottom of your electric rice cooker pot. Arrange the mackerel pieces on top of the kimchi. This layering allows the flavors to meld beautifully as it steams.
Step 4
Select the ‘Multi-cook’ or ‘Steam’ function on your electric rice cooker and set the cooking time for 20 minutes. The inherent seasoning of the aged kimchi will infuse the mackerel, creating a flavorful dish. Once the cooking cycle is complete and the steam has dissipated, carefully open the lid to reveal your delicious braised mackerel with aged kimchi. It’s a perfect dish to serve with a bowl of rice!
