King oyster mushrooms are a versatile ingredient, packed with nutrients and budget-friendly. I recently bought 1kg of them from an online store, and it was a generous amount! So, I decided to make a delicious soy sauce-braised side dish, perfect for a quick and tasty addition to your meals. Their wonderfully chewy texture and savory-sweet glaze will surely delight everyone.
Ingredients- 4 King Oyster Mushrooms
- A little green onion (chopped)
Seasoning- 1.5 Tbsp Soy Sauce
- 1 Tbsp Plum Extract (or honey/sugar)
- 1/3 Tbsp Sesame Oil
- 1.5 Tbsp Soy Sauce

Cooking Instructions
Step 1
Prepare the king oyster mushrooms by slicing them lengthwise into your desired serving size. Aim for pieces that are slightly thick to maintain a pleasant chewy texture.
Step 2
Bring a pot of water to a boil with a pinch of salt. Briefly blanch the sliced mushrooms for about 30 seconds to 1 minute. Be careful not to overcook, as they can become too soft. Immediately rinse the blanched mushrooms under cold water to stop the cooking process. Drain them thoroughly in a colander, ensuring as much water as possible is removed. This step is crucial to prevent the dish from becoming watery later.
Step 3
Heat a lightly oiled pan over medium heat. Add the chopped green onion and sauté until fragrant, creating a nice aromatic base.

Add the blanched and well-drained king oyster mushrooms to the pan. Pour in the soy sauce and plum extract. Stir well to coat the mushrooms evenly with the sauce.

Continue to stir-fry and braise the mushrooms over medium heat until the sauce thickens and the mushrooms are glossy. Braising gently over medium heat prevents the sauce from burning and ensures the mushrooms are perfectly cooked.
