Braised Kelp and Raw Peanuts with Savory Soy Sauce
Recipe for Braised Kelp and Raw Peanuts
This is a special recipe that enhances the savory flavor of our frequently made braised raw peanuts by adding kelp. The chewy texture of the kelp combined with the nutty taste of the raw peanuts creates a dish that is perfect as a side for rice or as a snack with drinks.
Main Ingredients- 1kg raw peanuts
- 40g dried kelp pieces
- 3 cups water (approx. 600ml)
- 3 Tbsp maple syrup (sweetness adjustable)
Savory Braising Sauce- 1.5 cups low-sodium soy sauce (approx. 300ml)
- 1 cup sugar (approx. 200g)
- 2 cups kelp broth (approx. 400ml)
- 1.5 cups low-sodium soy sauce (approx. 300ml)

- 2 cups kelp broth (approx. 400ml)
Cooking Instructions
Step 1
1. Make Kelp Broth: Pour 3 cups of water into a pot and bring to a boil. Add 40g of dried kelp pieces and let it soak for about 30 minutes. Remove the kelp. You should have about 2 cups of liquid remaining. To this kelp broth, add 1.5 cups of low-sodium soy sauce and 1 cup of sugar, then stir well and bring to a boil. Continue stirring until the sugar is fully dissolved.

2. Prepare Raw Peanuts: Thoroughly wash 1kg of raw peanuts under running water. Soak them in plenty of water overnight to soften. Blanch the soaked peanuts in boiling water for about 5 minutes. Drain the blanched peanuts completely using a sieve and set them aside.

3. Start Braising the Peanuts: Once the savory braising sauce prepared in step 1 begins to boil, add all the blanched and drained peanuts from step 2. Bring it to a boil over high heat, then reduce the heat to medium-low. Gently braise the peanuts, stirring occasionally to ensure the seasoning is evenly distributed, until they are tender.

4. Add Kelp and Continue Braising: When the braising sauce has reduced considerably and a little remains, finely chop the reserved soaked kelp and add it to the pot. Continue to braise gently over low heat, allowing the seasoning to fully infuse into both the kelp and the peanuts.
Step 5
5. Finishing Touches: Once the sauce has almost completely thickened and coats the peanuts and kelp deliciously, stir in 3 tablespoons of maple syrup. Simmer for another 1-2 minutes. Your flavorful braised kelp and raw peanuts are now ready! You can substitute maple syrup with corn syrup or honey. Adjust the sweetness to your preference.

Tip: The chewy kelp, braised along with the peanuts, offers a unique texture and visual appeal. Sprinkling some toasted sesame seeds just before serving adds an extra layer of nutty flavor. This dish is excellent served with rice or as a satisfying snack with a cold drink.
