Delicious Braised Hard-Boiled Eggs with Shishito Peppers!
I made a savory and sweet braised dish using leftover baked eggs and shishito peppers. The chewy texture of the baked eggs is unique and makes for a fantastic side dish or even a snack with drinks! Enjoy this simple yet special flavor.
Main Ingredients- 6 Baked Eggs
- 150g Shishito Peppers
- 1/2 Onion
- 2 Bay Leaves
Braising Sauce- 3 Tbsp Kombu Soy Sauce
- 1 Tbsp Soup Soy Sauce
- 1 Tsp Oyster Sauce
- 2 Tbsp Oligosaccharide
- 1 Tbsp Sugar
- 1 Tbsp Mirin (or Sake)
- A little Sesame Oil
- A little Toasted Sesame Seeds
- 3 Tbsp Kombu Soy Sauce
- 1 Tbsp Soup Soy Sauce
- 1 Tsp Oyster Sauce
- 2 Tbsp Oligosaccharide
- 1 Tbsp Sugar
- 1 Tbsp Mirin (or Sake)
- A little Sesame Oil
- A little Toasted Sesame Seeds
Cooking Instructions
Step 1
First, peel the shells off the baked eggs and wash them thoroughly. If the shells are difficult to remove, rinsing them under running water can help. Make sure the eggs are clean.
Step 2
Wash the fresh shishito peppers under running water. Removing the stems will help the sauce penetrate better and make them easier to eat. If the peppers are very large, you can cut them in half.
Step 3
Peel the onion, wash it, and dice it into approximately 1.5cm cubes. If you don’t have onion, you can use the white parts of a leek, cut into large pieces, for a similar flavor.
Step 4
In a bowl, combine 3 Tbsp Kombu Soy Sauce, 1 Tbsp Soup Soy Sauce, 1 Tsp Oyster Sauce, 2 Tbsp Oligosaccharide, 1 Tbsp Sugar, and 1 Tbsp Mirin (or Sake). Whisk well until all the seasonings are dissolved. Then, add 1 cup (200ml) of water and mix again. Finally, add 2 bay leaves for aroma. You can adjust the sweetness by adding more or less oligosaccharide or sugar according to your preference.
Step 5
In a wide pot or pan, add the braising sauce from step 3 and the baked eggs. Bring to a boil over high heat and simmer for about 10 minutes. Stir occasionally to ensure the eggs are evenly coated and braised in the sauce.
Step 6
Once the eggs have simmered for a bit, add the shishito peppers (prepared in step 2) and the diced onion (from step 3). Mix well so the sauce coats everything evenly. Reduce the heat to medium-low and continue to braise for about 10 more minutes. Cook until the shishito peppers and onions are tender and the sauce has reduced to a glaze.
Step 7
Finally, drizzle in a little sesame oil and sprinkle with toasted sesame seeds for added fragrance. Turn off the heat and let it cool slightly. Cut the baked eggs into bite-sized pieces and place them in a container. Pour the remaining braising sauce over the eggs. Your delicious braised baked eggs with shishito peppers are ready to be enjoyed with a warm bowl of rice!
