Main Ingredients
  • 100g dried clam meat
  • 5-6 crunchy chili peppers (like Korean ‘asagi’ peppers)

Seasoning
  • 1 Tbsp soy sauce
  • 1 Tbsp mirin (rice wine)
  • 1 Tbsp corn syrup (or honey)
  • 2 Tbsp cooking oil
  • 2 Tbsp chopped green onion

Cooking Instructions

Step 1

First, rinse the dried clam meat thoroughly under cold running water. Gently rub and agitate the clam meat with your hands while rinsing to remove any sand or impurities. Continue rinsing until the water runs clear, then lightly drain the excess water.

Step 2

Next, prepare the braising sauce. In a small bowl, combine 1 Tbsp soy sauce, 1 Tbsp mirin, 1 Tbsp corn syrup, and 2 Tbsp chopped green onion. Mix well until all ingredients are evenly incorporated.

Step 3

Heat 2 Tbsp of cooking oil in a pan over medium heat. Add the cleaned dried clam meat and stir-fry for about 1-2 minutes until it becomes slightly translucent and develops a chewy texture. Add 1 Tbsp of mirin to the pan to reduce any potential fishy odors and enhance flavor. Slice the prepared crunchy chili peppers into bite-sized pieces and add them to the pan. Pour in the prepared seasoning sauce. Continue to stir-fry and braise everything together until the sauce thickens slightly and coats all the ingredients beautifully.
