- 3-4 bay leaves
- 1.5 cups water (300ml)
Seasoning- 4-5 Tbsp soy sauce (60-75ml)
- 1 Tbsp oyster sauce (15ml)
- 2-3 Tbsp oligodang (Korean corn syrup) (30-45ml)
- A pinch of sugar (adjust to taste)
- 1 tsp sesame oil (5ml)
- A sprinkle of sesame seeds
- 4-5 Tbsp soy sauce (60-75ml)
- 1 Tbsp oyster sauce (15ml)
- 2-3 Tbsp oligodang (Korean corn syrup) (30-45ml)
- A pinch of sugar (adjust to taste)
- 1 tsp sesame oil (5ml)
- A sprinkle of sesame seeds
Cooking Instructions
Step 1
First, prepare the pre-boiled quail eggs, typically sold in a packaged format. Discard all the liquid from the package, then rinse the quail eggs 1-2 times under cold water. Drain them well and set aside.
Step 2
Cut the chicken breast Vienna sausages in half. Briefly blanch them in boiling water to remove any excess oil or impurities. This step helps create a cleaner-tasting braised dish. After blanching, rinse them under cold water and drain.
Step 3
Now, let’s start braising! Place the prepared boiled quail eggs in a pot. Add 1.5 cups (300ml) of water and 3-4 bay leaves for aromatic flavor.
Step 4
In a separate bowl, mix together the soy sauce, oyster sauce, oligodang, and sugar to create the seasoning sauce. Pour this sauce into the pot with the quail eggs and stir well. Bring the mixture to a boil over high heat, then reduce to medium heat and let it simmer until the sauce begins to thicken. (Tip: Feel free to adjust the soy sauce and sweetness according to your preference.)
Step 5
When the sauce has reduced by about half, add the halved chicken breast Vienna sausages to the pot. Continue to simmer them with the quail eggs. (Tip: It’s a good idea to remove the bay leaves at this stage, as their flavor will have infused into the dish.)
Step 6
Continue to simmer until the sauce is almost completely absorbed or has a syrupy consistency. Finally, stir in 1 teaspoon of sesame oil and a sprinkle of sesame seeds for a nutty aroma. Your delicious braised chicken breast Vienna sausages and quail eggs are now ready to be served with a warm bowl of rice or enjoyed as a snack!
