First, thoroughly peel the burdock root using the back of a knife. Rinse it under running water, then cut it into lengths of about 4-5 cm. Slice the cut burdock root into thick julienne strips (about 0.5 cm thick). This cutting method helps the seasoning penetrate well and enhances the texture.

Heat a pan over medium-high heat. Add all the julienned burdock root to the pan, and generously drizzle in 8 Tbsp of perilla oil. Stir-fry over high heat for about 4-5 minutes until the burdock root softens slightly and becomes lightly golden. The perilla oil will release a fragrant aroma and help create a chewy texture.

Once the burdock root is lightly browned, pour in 2 cups (400ml) of water and bring it to a rolling boil over high heat for 15 minutes. Once boiling, reduce the heat to medium and add 6 Tbsp of soy sauce. Continue to simmer for about 3 minutes, allowing the soy sauce to coat the burdock root and darken in color. Taste as you go and adjust seasoning if needed. After about 3 minutes, lower the heat to low.

Now it’s time to add sweetness. Stir in 2-3 Tbsp of sugar and 2-3 Tbsp of oligosaccharide (or corn syrup), mixing well to combine with the burdock root and sauce. Feel free to adjust the sweetness to your preference.

Keep the heat on low and continue to simmer for another 3-5 minutes. Allow the sauce to fully absorb into the burdock root until it develops a glossy sheen. Stir occasionally to prevent sticking to the bottom of the pan.
