Ingredients- 3 burdock roots
- 1/3 cup soy sauce (approx. 60ml)
- 1/2 cup water (approx. 100ml)
- 1/3 cup corn syrup or rice syrup (approx. 60ml)
- 1 Tbsp sugar (approx. 15g)
- 1/3 cup perilla oil or sesame oil (approx. 60ml)
- A pinch of toasted sesame seeds

Step 1
Today, we’re making burdock root stir-fry, a simple yet popular side dish that pairs wonderfully with rice. First, thoroughly peel the burdock roots and then julienne them into bite-sized strips. Once prepared, simply stir-frying them will result in a delicious braised burdock dish!
Step 2
Place the julienned burdock root in a bowl of cold water with about 1 tablespoon of vinegar. Let it soak for 20-25 minutes. This process effectively removes the burdock’s natural bitterness. After soaking, drain the burdock and rinse it thoroughly under cold water to remove any remaining vinegar. Squeeze out as much water as possible. Then, heat 1/3 cup of perilla oil (or sesame oil) in a deep pan or pot over medium-low heat. Add the burdock and stir-fry until it slightly softens. It’s important to stir-fry until the burdock loses some of its stiffness.
Step 3
Once the burdock is tender and slightly wilted, add 1/2 cup of water and continue to stir-fry. This step helps the burdock become more tender and prepares it to absorb the flavors.
Step 4
Now it’s time to add the savory element. Pour in 1/3 cup of soy sauce and mix well with the burdock. The salty notes of the soy sauce will begin to infuse into the root.

Add sweetness by incorporating 1/3 cup of corn syrup (or rice syrup) and 1 tablespoon of sugar. Finally, sprinkle in a pinch of toasted sesame seeds for added aroma and flavor. (Note: Sugar is listed twice in the original input; typically, one tablespoon is sufficient. Adjust to your preference.)
Step 6
