Chewy Braised Burdock Root Using Leftover Onion and Apple Juice
I made braised burdock root using leftover onion syrup and apple essence. It’s effective for making a chewy and sweet side dish without adding water or sugar. You can enjoy the natural sweetness and flavor of the ingredients, making it a crowd-pleaser.

- 300g whole burdock root
- 1 pouch onion juice (approx. 100ml)
- 1 pouch apple juice (approx. 100ml)
Cooking Instructions
Step 1
Begin by preparing the whole burdock root. Thoroughly brush off any dirt. Use a peeler to carefully remove the skin. As soon as the skin is removed, place the burdock root in water to prevent browning.

Prepare the key ingredients for this recipe: onion juice and apple juice. Commercially available pouches of each are convenient. These fruit and vegetable juices will add a deep sweetness and rich flavor to the braised burdock root, eliminating the need for added sugar.
Step 3
Now, let’s prepare the burdock root for braising with the seasoning ingredients. Cut the burdock root into bite-sized pieces (about 5-7 cm long) and then slice them diagonally about 0.5 cm thick. This shape allows the seasoning to penetrate well and improves the texture. After slicing, soak the burdock root in cold water for about 10 minutes to remove any astringent taste.
Step 4
In a wide pot or pan, combine the onion juice, apple juice, and 5 tablespoons of soy sauce. Mix them well. This mixture will serve as the base seasoning for braising the burdock root.

Add all the prepared burdock root, after draining it, to the pot with the seasoning mixture. Turn the heat to medium-high, not high. Begin the braising process, stirring occasionally to ensure the seasoning coats the burdock root evenly.

Once the seasoning mixture starts to boil vigorously, you’ll notice the burdock root taking on a beautiful soy sauce color and the liquid beginning to reduce. At this point, lower the heat to medium-low. Be cautious of high heat, as it can cause the seasoning to burn. Continue to braise slowly over medium-low heat.
Step 7
As the seasoning reduces to a thick consistency and the burdock root develops a chewy texture, add 2-3 tablespoons of rice syrup. Continue to simmer gently over low heat after adding the rice syrup. This will enhance the deep sweetness and add a wonderful sheen, creating a truly delicious braised burdock root. Feel free to adjust the amount of rice syrup to your preference.
Step 8
Finally, when the seasoning has almost completely reduced and is just beginning to coat the bottom of the pan, drizzle in 1 tablespoon of corn syrup. Corn syrup will add an extra gloss, making the dish look even more appetizing. Stir quickly to ensure the burdock root is coated.

Turn off the heat, and sprinkle a pinch of toasted sesame seeds over the finished braised burdock root for a delightful garnish! Allow it to cool slightly, then store it in an airtight container in the refrigerator. You’ll have a wonderful side dish that can be enjoyed for several days.
