  • 1/2 Carrot
  • 1 Sweet potato
  • 1 stalk Green onion
  • 1/2 Onion
  • 10 Chestnuts
  • 3 Shiitake mushrooms
  • 1 Green chili pepper
  • 1 Red chili pepper
  • 1L Water

Seasoning Ingredients
  • 100ml Chungjungone Sunshine Brewed Soy Sauce Aged with Seed Soy Sauce Method
  • 1 can Pear drink (approx. 238ml)
  • 1 Tbsp Sugar
  • 1 Tbsp Minced garlic
  • 1/2 Tbsp Sesame oil
  • 1/3 Tbsp Grated ginger
  • 1/3 tsp Black pepper

Cooking Instructions

Step 1

First, soak the beef short ribs in cold water for about 30 minutes to 1 hour to remove excess blood. Properly removing the blood is crucial for a clean and delicious braised dish without any gamey smell.

Step 2

Prepare the vegetables for the braised ribs. Peel and cut the carrots, sweet potatoes, and onions into bite-sized, generous pieces. Peel the chestnuts and set them aside. Remove the stems from the shiitake mushrooms and slice them, keeping their shape. Finally, thinly slice the green and red chili peppers diagonally to add a vibrant color.

Step 3

Now, let’s make the secret seasoning that’s key to a delicious braised beef short ribs. In a bowl, combine 100ml of Chungjungone Sunshine Brewed Soy Sauce Aged with Seed Soy Sauce Method, 1 can of pear drink, 1 tablespoon of sugar, 1 tablespoon of minced garlic, 1/2 tablespoon of sesame oil, 1/3 tablespoon of grated ginger, and 1/3 teaspoon of black pepper. Mix everything well until thoroughly combined.

Step 4

In a deep pot, add the blood-removed beef short ribs, the prepared vegetables, the seasoning mixture, and 1L of water. Bring it to a boil over high heat. Starting with high heat helps tenderize the meat effectively.

Step 5

Once the braised short ribs start boiling vigorously, reduce the heat to medium. Let it simmer gently until the meat and vegetables are tender. When the meat is almost cooked through, add the prepared green onions and chili peppers and simmer for a little longer. Adding the green onions and chili peppers at the end helps preserve their fresh aroma and color.
