Cute & Wobbly Jelly Recipe: Easily Made with Shaved Ice Syrup and Fruit Syrup!
I’ve always enjoyed making jellies and ‘Yokan’ (red bean jelly). I had some shaved ice syrup left over, so I decided to try making jelly in cute molds. Depending on the amount of gelatin used, you can create anything from a firm, chewy jelly to a soft, spoonable cup jelly. Customize it to your liking!
Key Ingredients- Shaved ice fruit syrup 3 Tbsp (syrup with fruit pieces is recommended)
- Milk 3 Tbsp
- Fruit syrup 8 Tbsp (clarified fruit syrup is best for intense flavor)
- Sheet gelatin 3 sheets
- Cold water 3 cups (for blooming gelatin)

Cooking Instructions
Step 1
First, gather all your ingredients and tools. For the shaved ice syrup, using one with actual fruit pieces will add a nice texture. For the fruit syrup, a clarified or concentrated version will provide a richer flavor. Prepare your silicone molds – they make unmolding easy! Also, have plastic wrap or a lid ready to cover the molds. Set aside a bowl of cold water for blooming the gelatin and a saucepan with a little water for the double boiler method.
Step 2
In separate small cups or heatproof bowls, add the shaved ice syrup and fruit syrup. If using clarified fruit syrup, measure out 8 tablespoons. If using a fruit syrup with pieces, like strawberry, mix 3 tablespoons of syrup with 3 tablespoons of milk. Place these cups into the saucepan with water. Gently warm the mixtures over low heat until they are just warm to the touch – do not boil. This helps the gelatin dissolve smoothly.
Step 3
While the syrups are warming, bloom the sheet gelatin. Place the gelatin sheets in the cold water for about 10-20 seconds until softened. (Generally, 1 sheet of gelatin is used for every 60-80ml of liquid). Squeeze out excess water from the softened gelatin sheets by hand. Add the squeezed gelatin to each warm syrup mixture and stir gently until completely dissolved and no lumps remain. Ensure it’s well combined.
Step 4
Once the gelatin is fully dissolved in each mixture, carefully pour the liquids into your silicone molds. Be careful not to overfill the molds; leave a little space at the top.
Step 5
To prevent any fridge odors from affecting the jelly, cover the molds tightly with plastic wrap or a lid. Place the covered molds in the refrigerator and let them set for at least 3 hours, or until firm. The setting time may vary depending on the amount of gelatin used.
Step 6
Once the jelly is completely set and firm, gently unmold it from the silicone. Your delightful bouncy jelly is ready! Since the syrups and fruit preparations are often sweet, enjoy in moderation.
