Tomatoes, with their vibrant red hue, are renowned for their immune-boosting properties, making them a superstar fruit and vegetable. Create your own homemade tomato juice that’s perfect for enjoying fresh or preserving for later. This recipe ensures your homemade juice stays fresh even after storing for a long time.   • 2L worth of ripe, large tomatoes

Flavoring Ingredients

  • 5 Tbsp corn syrup or sweetener (adjust to taste)
  • 1 tsp salt
  • 1L water (adjust based on tomato consistency)

Cooking Instructions

First, prepare your ripe, large tomatoes and blend them until smooth in a blender. Strain the blended tomatoes through a fine-mesh sieve to create a smooth and clear juice base. (For detailed instructions on preparing and blending tomatoes, please refer to another recipe!) I often blend a generous batch of tomatoes when they are on sale, portion them, and freeze them for later use. This way, I can enjoy the fresh taste of tomatoes year-round.

After thawing the frozen blended tomatoes, I have about 2L of juice. If the tomato puree is too thick, add 1L of water to make it easier to drink and bring it to a boil. The consistency can vary depending on the type of tomato and how ripe it is, so add water little by little until you reach your desired thickness. I added water to achieve a consistency similar to store-bought tomato juice. Instead of water, you can also mix in apple or pear juice for a richer fruity flavor.

To add a pleasant sweetness, especially for children, I’m adding 5 tablespoons of corn syrup. Please adjust the sweetness to your preference. Using honey, apple juice, or pear juice is also a great way to add natural sweetness. It’s important not to make it too sweet, but rather to highlight the natural flavor of the tomatoes.

To further enhance the sweetness and add a savory depth, add a small amount of salt, about 1 teaspoon. Salt helps to amplify the sweetness and balances the overall flavor profile.

After adding all ingredients and mixing well, bring the mixture to a rolling boil over high heat, then reduce to medium-low heat and simmer for a short while. Once the juice has simmered sufficiently, turn off the heat and let it cool completely. Pour the cooled tomato juice into clean glass bottles or containers and store them in the refrigerator. This homemade tomato juice, made with care, can be stored in the refrigerator and enjoyed fresh for a long time without spoiling. Enjoy your healthy and delicious tomato juice every day!
