  • 1 handful Cocktail Shrimp (thawed and rinsed)
  • 1 stalk Scallion (chopped)
  • 2 Red Cheongyang Peppers (seeds removed and chopped)

Let’s start by making the all-in-one sauce that will bring out the delicious flavors of the bok choy stir-fry. In a bowl, combine 1 Tbsp cornstarch, 2 Tbsp soy sauce, 1 Tbsp oyster sauce, 1/2 Tbsp sugar, and a pinch of black pepper. Mix well until there are no lumps. Preparing the sauce this way will significantly speed up your cooking time.

Next, prepare the vegetables. Chop 1 stalk of scallion and finely chop the 2 red Cheongyang peppers after removing their seeds. Feel free to adjust the amount of chili peppers if you prefer it spicier.

We’ll briefly blanch the bok choy in boiling water. To maintain its crisp texture, don’t overcook it; blanch for about 30 seconds to 1 minute. Keeping it crunchy is key!

Immediately after blanching, rinse the bok choy under cold water to cool it down. This step helps to preserve the vibrant green color of the bok choy and ensure its crispness.

Now it’s time to stir-fry! Heat 2 Tbsp of grapeseed oil in a pan over medium-low heat. Add the chopped scallions and sauté them slowly to release their fragrant oil, known as scallion oil. This oil will greatly enhance the overall flavor of your dish.

Once the scallions are fragrant, add 2 Tbsp of minced garlic and stir-fry over low heat, being careful not to burn the garlic. Adding a tiny bit of ginger (minced or thinly sliced) at this stage can add a more refined flavor note.

When the garlic is aromatic, add the thawed cocktail shrimp and stir-fry until they turn pink. Then, add the chopped red Cheongyang peppers and continue to cook, infusing a pleasant spicy aroma.
