Cooking Instructions
Step 1
First, prepare the sauce for your delicious stir-fry. In a bowl, combine 2 Tbsp soy sauce, 1 Tbsp cooking wine, 2 Tbsp oligosaccharide, 3 Tbsp oyster sauce, and a pinch of black pepper. Mix well and set aside.
Step 2
This is a crucial step for achieving the perfect sauce consistency in Chinese cuisine! Prepare the cornstarch slurry. In a small bowl, mix 1 Tbsp cornstarch with 2 Tbsp water until smooth and lump-free.
Step 3
Wash the fresh bok choy thoroughly. If the leaves are too large, tear them by hand into bite-sized pieces. For smaller leaves, trim the base and then cut them in half. This helps the sauce penetrate better, making them more flavorful.
Step 4
Prepare the scallion and garlic to add aromatic flavor. Finely chop about 1/3 stalk of scallion and 5 cloves of garlic. These will be stir-fried to release their fragrance.
Step 5
If using beef suitable for steak, gently pat it dry with paper towels to remove any excess moisture. This helps to reduce any gamey odor and ensures a cleaner taste.
Step 6
Cut the dried beef into bite-sized pieces. Avoid pieces that are too large, as they can be difficult to cook evenly, or too small, which might affect the texture. Aim for a consistent, manageable size.
Step 7
Now, let’s start stir-frying! Heat a generous amount of cooking oil in a pan over medium-low heat. Add the chopped scallion and garlic and stir-fry until they are lightly golden and fragrant. Be careful not to burn them.
Step 8
Once the scallion and garlic are fragrant, add the beef to the pan and stir-fry over high heat. Cook just until the outer surface of the beef is browned and no longer pink. This searing helps to lock in the juices.
Step 9
When the beef is almost cooked, add all the prepared bok choy to the pan and stir-fry quickly over high heat. Avoid overcooking, as this will make the bok choy lose its crispness. Pour in the prepared sauce and continue to stir-fry until the ingredients are well coated.
Step 10
As soon as the bok choy is slightly wilted but still tender-crisp, gradually add the cornstarch slurry while stirring. Continue to cook until the sauce thickens to your desired consistency. Your delicious bok choy and beef stir-fry is now ready!
Step 11
Serve the completed dish attractively on a plate. For an extra touch of flavor and visual appeal, sprinkle some sesame seeds on top. This dish is wonderful served over rice as a donburi, or wrapped in lettuce leaves for a fresh bite.
