Rich and Savory Black Rice & Beef Bone Broth Tofu Egg Porridge – Perfect for Baby Food and Patient Meals
Introducing a recipe for nutritious and easy-to-swallow Black Rice and Beef Bone Broth Tofu Egg Porridge. I quickly made this for my son who had difficulty eating due to severe laryngitis. Its smooth texture makes it ideal for baby food or meals for those who are unwell. Enjoy a hearty and comforting meal!
Main Ingredients- 1 small package of soft tofu (approx. 300g)
- 3 eggs
- 2 servings of cooked black rice (approx. 2 bowls)
- 2 packs of store-bought beef bone broth (approx. 1000ml)
Seasoning & Others- 2 cups of water (approx. 400ml)
- 2-3 pinches of salt (adjust to taste)
- A little black pepper (optional)
- 2 Tbsp sesame oil
- A little whole or crushed sesame seeds (for garnish)

Cooking Instructions
Step 1
In a pot, combine 2 servings of cooked black rice, 2 packs of store-bought beef bone broth, and 2 cups of water. If the rice is clumped, gently mash and break it apart with a spatula or ladle. Bring to a boil over high heat, then stir occasionally to help the black rice break down and dissolve into the broth.
Step 2
Gently tear open the soft tofu package and drain any excess water. Roughly mash the tofu with a spoon or fork. In a separate bowl, crack 3 eggs and beat them well with chopsticks or a whisk to create an egg mixture.
Step 3
Continue to simmer the black rice and beef bone broth mixture over high heat for about 15 minutes, or until the rice grains are soft and the porridge begins to thicken. Once thickened, add the mashed soft tofu. Season with 2 Tbsp of sesame oil and 2-3 pinches of salt. After adding the tofu, reduce the heat to medium-low. (It’s best to boil rapidly over high heat until you add the tofu).
Step 4
Simmer the tofu in the porridge for another 5-7 minutes over medium-low heat until the tofu is gently cooked. When the porridge reaches your desired consistency, slowly drizzle the beaten egg mixture in a circular motion around the edge of the pot. Do not stir immediately; wait about 30 seconds, then gently stir with chopsticks to create soft, fluffy egg curds. If desired, sprinkle a little black pepper at this stage for added flavor.
Step 5
Serve the finished Black Rice and Beef Bone Broth Tofu Egg Porridge in bowls.
