Main Ingredients- 1 Bitter gourd
- 3 Tbsp cooking oil
- 10g Bonito flakes (Katsuobushi)
Seasoning- 2 Tbsp soy sauce
- 1 Tbsp vinegar
- 1 Tbsp sesame oil
- 2 Tbsp soy sauce
- 1 Tbsp vinegar
- 1 Tbsp sesame oil
Cooking Instructions
Step 1
Wash the prepared bitter gourd thoroughly under running water. Remove the seeds and slice it diagonally into approximately 0.5cm thick pieces. This slicing method helps the seasoning penetrate well and improves the texture.
Step 2
Heat 3 tablespoons of cooking oil in a frying pan over medium heat. Add the sliced bitter gourd and stir-fry for about 3-4 minutes until it becomes slightly translucent. This step helps to reduce the bitterness of the bitter gourd.
Step 3
Once the bitter gourd is sufficiently stir-fried, add 2 tablespoons of soy sauce and 1 tablespoon of vinegar. Mix well and reduce the heat to medium-low. Simmer while stirring, allowing the seasoning to be absorbed by the bitter gourd. Be careful not to burn it, stirring occasionally.
Step 4
When the sauce has almost reduced and the mixture is slightly moist, add 1 tablespoon of sesame oil and 10g of bonito flakes. Stir-fry quickly to combine. The addition of bonito flakes enhances the umami flavor, making the dish even more aromatic. Once all ingredients are well integrated, it’s ready.
