Bite-Sized Shrimp and Chive Pancakes (Jeon)

Main Ingredients- 2 bunches Chives (approx. 100g)
- 1 paper cup Water (approx. 200ml)
- 1/2 Cheongyang chili pepper (seeds removed)
- 1/2 Red chili pepper (seeds removed)
- 9 Cocktail shrimp (thawed)
- 1 paper cup Buchim-garu (pancake mix, approx. 100g)
- 1/3 tsp Salt
Cooking Instructions
Step 1
First, prepare your vegetables. Wash the chives thoroughly and cut them into bite-sized pieces, about 3cm in length. Halve the Cheongyang and red chili peppers, remove the seeds, and then finely chop them. You can adjust the amount of Cheongyang chili pepper if you prefer it spicier.
Step 2
In a large bowl, combine the buchim-garu (pancake mix) and salt. Gradually add the water, measured with a paper cup, while mixing until you achieve a smooth batter without lumps. It’s important to get the consistency right – not too thin. Gently fold in the prepared chives, ensuring they are evenly coated with the batter.
Step 3
Heat a pan over medium heat and add a generous amount of cooking oil. Scoop about a tablespoon of the batter and carefully drop it onto the hot pan. Try to leave some space between each pancake so they don’t stick together. Cook for about 2-3 minutes until the bottom side is golden brown and crispy. Using plenty of oil will help achieve a crispier result.
Step 4
Once the batter starts to set slightly, arrange the thawed cocktail shrimp, chopped red chili pepper, and Cheongyang chili pepper attractively on top of each pancake. After adding the toppings, continue to cook over medium heat for another 2-3 minutes. Use a spatula to gently press down and ensure the bottoms are nicely browned. Flip them carefully and cook the other side until golden brown and cooked through. Your delicious bite-sized shrimp and chive jeon are now ready to enjoy!
