Bite-Sized Braised Tofu

Main Ingredients

  • 2 blocks (approx. 600g) firm tofu
  • 1/2 medium onion
  • 1/2 stalk green onion
  • 2 Korean chili peppers (cheongyang peppers)

Seasoning

  • 1.5 Tbsp gochugaru (Korean chili flakes)
  • 3-4 Tbsp soy sauce (adjust to taste)
  • 1 tsp minced garlic
  • 2-3 Tbsp oligosaccharide (adjust sweetness to taste)
  • 1 Tbsp sesame oil
  • A pinch of toasted sesame seeds
  • 1/2 cup (approx. 100ml) water or anchovy broth

Cooking Instructions

Step 1

Gently pat the tofu dry with paper towels. Cut it into bite-sized cubes, about 2.5cm (1 inch) in size. Place the cut tofu pieces neatly in a pot or a deep frying pan.

Slice or finely chop the onion. Mince the green onion and Korean chili peppers. If you like it spicy, you can include the seeds from the chili peppers.

Add the sliced onion on top of the tofu in the pot. Pour in 1/2 cup of water or broth. Bring this to a simmer over medium heat.

In a separate bowl, combine the minced green onion and chili peppers with the gochugaru, soy sauce, minced garlic, oligosaccharide, sesame oil, and toasted sesame seeds. Mix well to create the seasoning sauce.

Once the liquid in the pot starts to boil, evenly pour the prepared seasoning sauce over the tofu. Cover with a lid and braise over high heat for about 10 minutes. Taste and adjust the sweetness or saltiness by adding more oligosaccharide or soy sauce according to your preference.

During the braising process, gently shake the pot or carefully stir the tofu with a spatula to prevent it from breaking. Continue to cook until the sauce has penetrated the tofu and the liquid has reduced to a glaze. Be careful not to let it burn. Enjoy your delicious bite-sized braised tofu!
