First, thoroughly wash the bell pepper under running water. This ensures any dirt or residues are completely removed.

Carefully slice off the top of the bell pepper. Then, cut the pepper into rings about 1 to 1.5 cm thick. Remove the seeds and pith from the inside of each ring. Cutting them to a moderate thickness will help maintain their shape.

In a bowl, crack the eggs and add a pinch of salt. Whisk them well to create an egg mixture. Heat a frying pan over medium heat and add a generous amount of cooking oil. Gently pour the egg mixture into the center of each bell pepper ring, allowing the yolk to cook and fill the pepper.
