This is a simple and delicious seaweed soup that you can enjoy anytime, not just on birthdays. It makes for a healthy and satisfying meal, perfect for brunch. Imagine a spread of warm seaweed soup, multigrain rice, pan-seared cod with soy sauce, avocado salad, and a side of nutritious natto. The tender beef and rich broth of this miyeokguk are always comforting and incredibly tasty.
Ingredients- 1 handful dried seaweed (about 10-15g)
- 400g beef (for soup, thinly sliced)
- 1 Tbsp soy sauce for soup (Guk-ganjang)
- 1 Tbsp minced garlic
- 1.8L water (approx. 9 cups)
Cooking Instructions
Step 1
1. Rehydrate Seaweed: Soak one handful of dried seaweed in cold water for at least 30 minutes until fully rehydrated. Rinse the seaweed thoroughly, squeeze out excess water, and cut it into bite-sized pieces (about 3-4 cm). Reserve the soaking water; it adds a richer, deeper flavor to the soup.

2. Sauté Beef (using Instant Pot): Select the ‘Sauté’ function on your Instant Pot and add a little oil. Add the 400g of thinly sliced beef and stir-fry until it’s no longer pink. Pour in 1 tablespoon of soy sauce for soup (Guk-ganjang) and continue to stir-fry, allowing the beef to absorb the flavor.
Step 3
Add 1 tablespoon of minced garlic and sauté for about 1 minute until fragrant. This step enhances the savory depth of the seaweed soup.

3. Add Seaweed and Water: Add the rehydrated and squeezed seaweed to the pot (or Instant Pot) with the sautéed beef. Pour in 1.8 liters (about 9 cups) of water. If you reserved the seaweed soaking water, add it now for an even more robust and comforting broth.

4. Cook the Soup (using Instant Pot): Select the ‘Pressure Cook’ or ‘Soup/Broth’ setting on your Instant Pot and set the timer for 20 minutes. If cooking in a regular pot, bring the soup to a boil over medium heat, then reduce to low, cover, and simmer for 20-30 minutes until tender.
Step 6
Once the 20-minute cooking cycle is complete, allow the pressure to release naturally (this usually takes about 10-15 minutes) before carefully opening the lid.
Step 7
Your warm and tender beef seaweed soup is ready! Taste and adjust the seasoning if needed, adding a bit more soy sauce for soup or salt.

Prepare your natto as a side. You can add shredded seaweed or a dash of soy sauce to the natto if desired.
