Stew Ingredients

  • 2 cups rice water
  • A small amount of beef brisket (approx. 50-70g)
  • A small piece of zucchini (about 1/4)
  • A small piece of mild Spam (about 1/4 can)
  • A small piece of tofu (about 1/4 block)
  • A small piece of onion (about 1/4)

Seasoning

  • 1 Tbsp gochujang (Korean chili paste)
  • 1 Tbsp fish sauce (or soy sauce)
  • 1 tsp minced garlic
  • Scallions (chopped)

Cooking Instructions

Step 1

Pour 2 cups of rice water into a pot and bring to a boil over high heat. Once the rice water is boiling, proceed to the next step.

Step 2

Prepare the vegetables: slice the zucchini into half-moons, dice the Spam and tofu into bite-sized pieces, and thinly slice the onion. Chop the scallions.

Step 3

Once the water is at a rolling boil, reduce the heat to medium-low and dissolve 1 Tbsp of gochujang into the water. Ensure the gochujang is smoothly incorporated without lumps.

Step 4

When the gochujang broth returns to a boil, add the beef brisket and let it cook briefly. Once the brisket is partially cooked, add the prepared zucchini, Spam, tofu, and onion in order.

Step 5

After the stew simmers for a bit, add 1 Tbsp of fish sauce and 1 tsp of minced garlic to adjust the seasoning. Finally, add the chopped scallions and simmer for about 1 more minute.

Step 6

Serve the finished Beef Brisket Gochujang Stew hot with rice. Enjoy your delicious meal!
