  • 1/4 Onion
  • 1 handful of Chives
  • 1/2 pack of Enoki Mushrooms
  • 1 Eggplant

Spicy & Sweet Sauce

  • 0.5 Tbsp Gochugaru (Korean chili powder)
  • 0.5 Tbsp Minced Garlic
  • 1 Tbsp Maesil Cheong (plum extract)
  • 2 Tbsp Soy Sauce
  • 0.5 Tbsp Water
  • 0.3 Tbsp Prepared Mustard (adjust to taste)
  • A pinch of Sesame Seeds

Cooking Instructions

Step 1

Begin by preparing your fresh vegetables. The eggplant, in season now, boasts a beautiful, deep purple hue that is truly appetizing! Using colorful bell peppers and onions will make the dish even more visually appealing.

Step 1

Step 2

Wash the eggplant thoroughly. Using a vegetable peeler or a sharp knife, slice the eggplant thinly, about 0.3 to 0.5 cm thick. Slicing them thinly ensures they cook evenly with the beef brisket and become tender when rolled.

Step 2

Step 3

Heat a pan over medium heat without any oil. Lightly grill the thinly sliced eggplant. Briefly cooking the eggplant beforehand helps it roll more smoothly inside the beef and reduces its moisture content, improving the texture. Don’t overcook it; just until the color deepens slightly. Once cooked, let it cool completely. This step is crucial for creating neat and tidy rolls.

Step 3

Step 4

Now, let’s make the key to this dish: the spicy and sweet sauce! Prepared mustard adds a pleasant kick that cuts through the richness of the beef brisket, enhancing its overall flavor. Combine gochugaru, minced garlic, maesil cheong, soy sauce, water, prepared mustard, and sesame seeds. Stir everything together until well combined. Feel free to adjust the amount of prepared mustard to your personal preference. This sauce pairs wonderfully with meat dishes featuring eggplant.

Step 4

Step 5

It’s time to assemble the beef brisket and eggplant rolls! Lay out a slice of beef brisket. Place a piece of the lightly grilled and cooled eggplant on top. Then, add a generous portion of your prepared vegetables: bean sprouts, bell peppers, onion, chives, and enoki mushrooms. Carefully and tightly roll the beef brisket around the eggplant and vegetables. Tuck in the ends to ensure a neat roll.

Step 5

Step 6

Admire your beautifully rolled beef brisket and eggplant creations, lined up and ready for the next step! The glimpse of purple eggplant peeking through the thinly sliced brisket is truly appealing. A dish that looks as good as it tastes is taking shape.

Step 6

Step 7

Place the assembled rolls into a preheated pan over medium-low heat, with no added oil. They can also be steamed for a different texture. The beef brisket will render its own fat, providing enough richness to cook the vegetables deliciously without any extra oil. Since the eggplant is already partially cooked and only the beef brisket needs to be fully cooked, about 5 minutes of grilling is sufficient. Cook until the beef is golden brown and the vegetables are tender.

Step 7

Step 8

Voila! Your delicious grilled beef brisket and eggplant rolls are ready. Here’s a special chef’s tip for you: don’t waste the flavorful rendered beef fat left in the pan! Add any leftover bean sprouts and vegetables to the pan, drizzle with a bit of oyster sauce, and stir-fry them. These sautéed vegetables, infused with the delicious essence of the beef, make an excellent side dish on their own. Enjoy every last bit of this delightful meal! ♬
