- 6 String cheese sticks
Sweet & Salty Sauce Ingredients (Measurements are for 1 Tablespoon)- 1 Tbsp Soy sauce
- 2 Tbsp Oyster sauce
- 1 Tbsp Mirin (or cooking wine)
- 1 Tbsp Plum extract (or syrup)
- 1 Tbsp Sugar
- 1 Tbsp Minced garlic
- 3 Tbsp Water
- Pinch of salt
- Pinch of black pepper
- 1 Tbsp Soy sauce
- 2 Tbsp Oyster sauce
- 1 Tbsp Mirin (or cooking wine)
- 1 Tbsp Plum extract (or syrup)
- 1 Tbsp Sugar
- 1 Tbsp Minced garlic
- 3 Tbsp Water
- Pinch of salt
- Pinch of black pepper
Cooking Instructions
Step 1
Start by thoroughly washing the pack of Korean green chilies under running water. Pat them dry to remove excess moisture. This step ensures cleanliness and prepares them for stuffing.
Step 2
Next, carefully slice each chili lengthwise, making sure not to cut all the way through. Use a small spoon or a paring knife to gently scoop out the seeds and membranes from the inside of each chili. This process removes any bitterness and creates space for the filling.
Step 3
Now, take the string cheese sticks and insert one into each prepared chili. If the chilies are large, you can cut the string cheese to fit. The cheese will melt beautifully inside, adding a wonderful creamy texture and flavor.
Step 4
Drape thin slices of beef brisket around each chili, enclosing the cheese-filled pepper. For an extra layer of flavor, lightly season the brisket with salt and pepper beforehand. (Tip: Thinly sliced pork belly or beef for shabu-shabu are also excellent alternatives to brisket.)
Step 5
Heat a lightly oiled pan over medium heat. Carefully place the brisket-wrapped chili rolls into the pan. Cook them, turning occasionally, until the beef brisket is nicely browned and cooked through on all sides. Be mindful not to burn the brisket.
Step 6
Let’s prepare the irresistible sweet and salty sauce. Add 1 tablespoon of soy sauce to a small bowl.
Step 7
Incorporate 1 tablespoon of plum extract for a touch of sweetness and tang.
Step 8
Add 1 tablespoon of mirin (or cooking wine) to help tenderize the meat and add depth of flavor.
Step 9
Stir in 1 tablespoon of corn syrup for a glossy finish and mild sweetness. (If you don’t have corn syrup, you can use sugar.)
Step 10
Add 1 tablespoon of sugar for that essential sweetness.
Step 11
Boost the umami factor with 2 tablespoons of oyster sauce.
Step 12
Include 1 tablespoon of minced garlic for aromatic flavor.
Step 13
Finally, pour in 3 tablespoons of water and whisk everything together until well combined. Your flavorful sweet and salty sauce is now ready!
Step 14
Reduce the heat to low. Pour the prepared sweet and salty sauce over the cooked chili rolls in the pan. Let it simmer and thicken, coating the rolls evenly. Stir gently to prevent the sauce from burning and ensure all sides are glazed.
Step 15
Continue to cook on low heat, stirring occasionally, until the sauce has reduced and the chili rolls are beautifully glazed and tender. This slow simmering allows the flavors to meld together perfectly.
Step 16
And there you have it! Your delectable ‘Beef Brisket and Cheese Stuffed Chili Rolls’ are complete. This dish offers a truly addictive combination of savory, sweet, and salty flavors that are hard to resist.
Step 17
When you slice into a warm roll, you’ll see the delightful string cheese stretching out, accompanied by the rich, sweet, and savory sauce. Each bite is a perfect harmony of textures and tastes, making it incredibly moreish. Serve these to your guests and watch them disappear!
