Hello everyone! Today, I’m excited to share a truly delicious recipe for Beef and Chive Japchae, packed with aromatic chives and tender beef. It’s a super simple version that anyone can easily follow, making it a perfect dish for special occasions!

First, soak the glass noodles for 4 servings in cold water for at least 20 minutes until fully softened. Pre-soaking ensures they cook beautifully and remain tender. Lightly pat dry the 100g of beef with paper towels and slice it into bite-sized pieces. Prepare the vegetables: 1 medium carrot, 1 medium onion, and a handful of shiitake mushrooms. Julienne the carrot and onion. Slice the shiitake mushrooms similarly. Wash the chives and cut them into large, 2-3 inch pieces.

Heat 1-2 Tbsp of cooking oil in a pan over medium-high heat. Add the beef and stir-fry until it’s mostly cooked through, then season with a pinch of black pepper. Once the beef is partially cooked, add the prepared vegetables (onion, carrot, shiitake mushrooms) and stir-fry together. The key here is to cook the vegetables quickly over high heat until they are just tender-crisp, not mushy.

Now, let’s coat the noodles with oil for a better texture. Either use a clean pan or wipe the same one. Add a little cooking oil and stir-fry the pre-soaked glass noodles. Coating the noodles with oil helps prevent them from sticking and maintains a pleasant chewy texture. Add 1/2 cup of soy sauce and 2 Tbsp of sugar. Continue to stir-fry until the noodles turn a deeper color and absorb the sauce well.

Add the chives right before turning off the heat, as they only need a brief moment to wilt.
