Main Ingredients- 1 cup well-fermented kimchi (standard paper cup)
- 100g ham
- 1 bowl of freshly cooked rice
- 1 egg (optional)
Seasoning Ingredients- 2 Tbsp cooking oil
- 1/2 Tbsp sugar
- 2 Tbsp soy sauce
- 1/2 Tbsp gochugaru (Korean chili flakes) (optional)
- 3 Tbsp water
- 2 Tbsp cooking oil
- 1/2 Tbsp sugar
- 2 Tbsp soy sauce
- 1/2 Tbsp gochugaru (Korean chili flakes) (optional)
- 3 Tbsp water
Cooking Instructions
Step 1
First, prepare the kimchi. You’ll need about 1 cup of well-fermented, sour kimchi (measured with a standard paper cup). If your kimchi is too sour, you can balance the acidity by adding 1 tablespoon of brewed vinegar. (However, avoid using apple cider vinegar as it can alter the kimchi’s flavor.) Finely chop the kimchi using scissors or a knife into bite-sized pieces.
Step 2
Take a deep-frying pan or wok and add 2 tablespoons of cooking oil. Add the 100g of ham and stir-fry until it becomes golden brown and fragrant. Once the ham is lightly browned, add 1/2 tablespoon of sugar and 2 tablespoons of soy sauce. Quickly mix them together, ensuring the sugar and soy sauce coat the ham well.
Step 3
As the soy sauce begins to bubble in the pan, add the 1 cup of chopped kimchi and 1/2 tablespoon of gochugaru (Korean chili flakes). The gochugaru adds color and a touch of spiciness, but you can omit it if your kimchi is already spicy enough. To prevent the kimchi from drying out, add 3 tablespoons of water and stir-fry until all ingredients are well combined and fragrant. Once everything is nicely sautéed, turn off the heat.
Step 4
With the heat turned off, add 1 bowl of freshly cooked rice to the pan. Use a spatula or spoon to break up any clumps of rice and gently mix it with the kimchi seasoning until evenly combined. It’s crucial to do this while the heat is off to prevent the rice from burning. Ensure the seasoning is well distributed amongst the grains of rice.
Step 5
Once the rice and seasoning are well mixed, return the pan to the stove over medium heat and cook for another 1-2 minutes. Stir-fry until the rice grains are distinct and glossy. Your delicious ham kimchi fried rice is ready! Serve it in a nice bowl and, if you like, top it with a fried egg for an even more satisfying meal. Enjoy!
