I tried making the special Tuna and Potato Stew recipe that culinary researcher Baek Jong-won shared when he was active as ‘Baekjubu’. It’s a delicious stew that works perfectly as a side dish for rice or even as a main course.

Tuna and Potato Stew Ingredients

  • 150g canned tuna (drained)
  • 2 potatoes (medium-sized)
  • 1 onion (medium-sized)
  • 1 stalk green onion
  • 1 Korean chili pepper (adjust for spice preference)

Golden Seasoning Mix Ingredients

  • 1 Tbsp minced garlic
  • 1 Tbsp gochujang (Korean chili paste)
  • 0.5 Tbsp sugar
  • 1 Tbsp gochugaru (Korean chili flakes)
  • 2 Tbsp soy sauce
  • 1 Tbsp sesame oil
  • Water (3 cans worth, using the tuna can)

Cooking Instructions

Step 1

First, chop all your vegetables. Peel the potatoes and cut them into 2-3 cm cubes. Slice the onion into similar-sized pieces. Finely chop the Korean chili pepper for a touch of heat. Slice the green onion diagonally to add at the end. In a pot, place the cubed potatoes at the very bottom. Layer the sliced onions on top of the potatoes, followed by the chopped Korean chili peppers.

Now, it’s time to prepare the key seasoning mix. In a bowl, combine 1 Tbsp minced garlic, 1 Tbsp gochujang, 0.5 Tbsp sugar, 1 Tbsp gochugaru, 2 Tbsp soy sauce, and 1 Tbsp sesame oil. Mix them well. Evenly spread this seasoning mix over the vegetables in the pot.

After adding the seasoning, place the drained canned tuna directly onto the mixture. Then, use the empty tuna can to measure and add 3 cans of water to the pot. The water should roughly cover the ingredients. Bring to a boil over high heat, then reduce to medium heat and simmer until the potatoes are tender. Once the potatoes are almost cooked through, add the prepared green onions and simmer for another moment.

Finally, let it simmer until the sauce thickens to your desired consistency. Your delicious Tuna and Potato Stew is ready! Enjoy this hearty and flavorful meal, perfect for spooning over a bowl of rice.
