Pork Rib Soup Ingredients

  • 850g fresh pork back ribs
  • 30 whole garlic cloves (for enhanced aroma)
  • 1.3 Tbsp oyster sauce (for boosted umami!)
  • 1.3 Tbsp whole peppercorns (key ingredient for flavor)
  • 2/3 Tbsp sugar (balances the flavors)
  • 1 Tbsp coarse sea salt (for seasoning)
  • 2 bay leaves (excellent for removing gamey odors)
  • 200g mini napa cabbage (adds sweet and refreshing notes, plus texture)
  • 2.2 liters clean water (for simmering the broth)
  • A little white scallion and egg garnish (for topping)

Dipping Sauce (Basic)

  • 2 Tbsp soy sauce
  • 1/3 Tbsp sugar
  • 1 tsp minced garlic
  • 1 Cheongyang chili pepper (finely chopped for a spicy kick)
  • 3 Tbsp chopped scallions

Dipping Sauce (Optional Additions)

  • 1/2 Tbsp oyster sauce (enhances the flavor even further)
  • 1/2 Tbsp fish sauce (umami explosion!)

Cooking Instructions

Soak the pork back ribs in cold water for 3 hours to thoroughly remove any blood. This step is crucial for a clean and impurity-free taste.

Fill a pot with plenty of water and add 100ml of soju or cooking wine. Bring the water to a rolling boil, then add the drained ribs and blanch them over high heat for 5 minutes. This effectively removes impurities.

Rinse the blanched ribs again under cold running water. Carefully remove and discard any remaining blood clots or impurities attached to the ribs. This will ensure a clear and clean broth.

After 10 minutes, add the remaining 1.4 liters of water. Once the soup comes to a boil, reduce the heat to low. Cover with a lid and simmer gently for 45 minutes, allowing the pork ribs to become tender. Patience is key to achieving a delicious result!

After 45 minutes, strain the broth through a sieve to separate the clear liquid. Set aside the tender pork ribs and cabbage, and discard the sautéed garlic, peppercorns, and bay leaves. Keeping the broth clear is essential.
