Main Ingredients
- 120g Pork Neck (recommended for kimchi stew)
- 150g Well-fermented Cabbage Kimchi (aged kimchi is even better!)
- 500g Rice Water (adds depth to the stew)
- 1 Red Chili Pepper (for color and mild spiciness)
- 1 Cheongyang Chili Pepper (for a kick of spiciness)
- 1/4 Green Onion (for aroma and freshness)
Seasoning Paste
- 2 Tbsp Minced Garlic (enhances flavor)
- 2 Tbsp Coarse Gochugaru (Korean chili flakes for a robust flavor and color)
- 2 Tbsp Fine Gochugaru (for a smoother flavor and color)
- 1 Tbsp Soup Soy Sauce (for savory depth)
- 1 Tbsp Saeujeot (fermented salted shrimp for a deep umami and refreshing taste)
- 2 Tbsp Minced Garlic (enhances flavor)
- 2 Tbsp Coarse Gochugaru (Korean chili flakes for a robust flavor and color)
- 2 Tbsp Fine Gochugaru (for a smoother flavor and color)
- 1 Tbsp Soup Soy Sauce (for savory depth)
- 1 Tbsp Saeujeot (fermented salted shrimp for a deep umami and refreshing taste)
Cooking Instructions
Step 1
Gently soak the pork neck in cold water for about 5 minutes to remove excess blood. Pat dry with paper towels for a cleaner result.
Step 2
Cut the kimchi into bite-sized pieces. Cutting them too large might increase cooking time, so one-bite pieces are ideal.
Step 3
Remove the seeds from the red chili pepper and Cheongyang chili pepper, then slice them diagonally along with the green onion. You can adjust the amount of chili peppers to your preference.

Now, place the sliced pork into a pot and pour in the rice water. Turn on the heat and begin to boil.

Once the broth starts boiling, reduce the heat to medium. It’s important to simmer gently to allow the delicious flavors of the pork to infuse into the broth. Cook for about 5 minutes.

After the pork flavor has sufficiently infused, add the sliced kimchi and cook together. Let it simmer until the kimchi becomes tender.

Once the kimchi is somewhat cooked, add the minced garlic, green onion, and Cheongyang chili pepper. You can also add the red chili pepper now for a vibrant color.

Add all the remaining seasoning paste ingredients (coarse gochugaru, fine gochugaru, soup soy sauce, saeujeot) and mix well. Stir to distribute the seasonings evenly, then let it simmer for another 5 to 10 minutes to allow the kimchi flavor to deepen.

Once the seasonings have melded and the stew is bubbling deliciously, garnish with the sliced red chili pepper and green onion. Turn off the heat, and your flavorful pork kimchi stew is ready!
