Baek Jong-won’s Omurice: A Special Sauce Recipe from JiphapTV’s BaekpaDuh
Recreate the classic flavors of a Western-style diner at home with this Omurice recipe, featured on JiphapTV’s BaekpaDuh!
I tried making the Omurice recipe by Baek Jong-won, which was featured on the TV show ‘JiphapTV BaekpaDuh.’ The sauce was surprisingly unique and incredibly delicious, reminiscent of old-school Western-style restaurants. It’s a flavor that kids will absolutely adore, making it a perfect dish for the whole family!
Omurice Sauce & Fried Rice Ingredients- 1 cup minced pork (approx. 150g)
- 3 cups diced onion (approx. 250g)
- 1 cup diced carrot (approx. 150g)
- 1/2 cup cooking oil (approx. 120ml)
- 1/2 cup ketchup (approx. 120ml)
- 2 Tbsp soy sauce
- 1 Tbsp vinegar
- 1/3 Tbsp salt (approx. 1/2 tsp)
- 3 Tbsp butter (approx. 45g)
- 2 cups rice (cooked, warm)
- 3 eggs
- A pinch of black pepper
Cooking Instructions
Step 1
First, prepare the vegetables for the Omurice sauce. Finely dice the onions to make 3 cups. Also, finely dice the carrots to yield 1 cup. Having the vegetables prepped and diced makes the stir-frying process much smoother.
Step 2
Now, let’s start stir-frying the sauce. Heat a pan over medium heat and add 1/2 cup of cooking oil. Add 1 cup of minced pork and stir-fry until the pork changes color to white. Once the pork is cooked, add the 3 cups of diced onion and 1 cup of diced carrot, and continue to sauté until the vegetables become translucent and tender.
Step 3
Once the vegetables are sufficiently sautéed, push them to one side of the pan. It’s important to tilt the pan to let any excess moisture evaporate. This step helps to deepen the flavor of the sauce. Season with 1/3 Tbsp of salt and a pinch of black pepper.
Step 4
In the empty space on the pan, add all the sauce ingredients. Combine 2 Tbsp of soy sauce, 1 Tbsp of vinegar, 1/2 cup of ketchup, and 3 Tbsp of butter for added richness. Stir everything together as the butter melts and mixes with the other sauce ingredients.
Step 5
Stir-fry everything together again to ensure the sauce ingredients are well combined and evenly distributed with the sautéed vegetables. Continue to cook for about 1-2 minutes to allow the flavors to meld into the ingredients. Then, turn off the heat and let it rest briefly for the flavors to mature.
Step 6
Now it’s time to make the fried rice. Place 2 cups of warm rice in a bowl. Add 1 cup of the Omurice sauce you just made. The perfect ratio for rice to sauce is 2:1. Mix thoroughly to ensure each grain of rice is evenly coated with the sauce.
Step 7
To shape the rice nicely, pack the fried rice firmly into a rice bowl. Press down tightly so the rice compacts well inside the bowl. This will help the Omurice hold its shape when you flip it onto the plate.
Step 8
Next, we’ll prepare the egg blanket, the star of the Omurice. Crack 3 eggs into a bowl and whisk them well. Pour the beaten eggs into a lightly oiled pan over medium-low heat, spreading them thinly to create an omelet. It’s important not to make it too thick and to spread it evenly across the pan.
Step 9
When the bottom of the egg omelet is cooked and the top is still slightly moist (about halfway cooked), carefully place the prepared fried rice in the center of the egg. Immediately turn off the heat. Using the edges of the egg, gently fold and wrap the rice, much like tucking in a baby snugly.
Step 10
Carefully invert the finished Omurice onto a serving plate. It’s best to use the edge of the pan to help flip it gently so the shape isn’t ruined. To give it a nice shape, wrap the Omurice with a paper towel and gently mold it into a slightly elongated, rugby-ball shape. Finally, drizzle ketchup in a zig-zag pattern to complete your delicious Omurice!
