Main Ingredients

  • 1kg chicken cut for braising (Dakbokkeumtang용)
  • 1 King oyster mushroom
  • 1 Onion
  • 3 Potatoes
  • 1 Carrot
  • 1 Red chili pepper
  • 2 Korean green chili peppers (Cheongyang)
  • 1 Green onion (scallion)
  • 10 whole black peppercorns
  • 2 Tbsp Cheongju (rice wine)

Seasoning

  • 3 cups water (approx. 600ml)
  • 1/2 cup soy sauce (approx. 100ml)
  • 4 Tbsp red pepper powder (Gochugaru)
  • 3 Tbsp sugar
  • 1 Tbsp minced garlic
  • Pinch of black pepper

Cooking Instructions

Step 1

First, prepare 1kg of chicken cut for braising. Rinse it thoroughly under cold running water multiple times. This is an important step to remove any impurities or blood from the chicken.

Place the cleaned chicken in a pot and cover it with enough water to submerge the pieces. Add 10 whole black peppercorns and 2 Tbsp of Cheongju (rice wine) to effectively remove any gamey odors or unpleasant smells. Bring to a rolling boil over high heat for 5 minutes.

Drain the blanched chicken and rinse it again under cold running water. This step thoroughly removes any remaining impurities or excess fat. Also, wipe the pot clean to prepare for the next stage.

Peel the carrot and slice it into round pieces about 1-1.5cm thick. To make them look nice and prevent them from breaking apart when cooked, you can trim the edges to create a decorative round shape (called ‘doryeok-kaki’).

Slice the king oyster mushroom about 0.5cm thick. Slicing them slightly thicker will give a better texture. Cut each slice into three equal pieces for easier eating.

Peel the onion and cut it into large, chunky pieces. If you chop it too finely, it might disintegrate while simmering, so larger pieces maintain better texture.

Peel the potatoes and cut them into large chunks. If cut too small, they can easily break down and make the broth cloudy. Aim for pieces similar in size to the chicken pieces.

Trim the stems off the red chili pepper and the Korean green chili peppers. Slice them diagonally about 0.5cm thick. These will add a touch of heat and vibrant color to the dish.

Cut the green onion into large, roughly chopped pieces. Similar to the other vegetables, finely chopped green onion can become mushy. These will be added towards the end to enhance flavor.

Pour in 3 cups (approx. 600ml) of water, enough to cover the chicken. Add 3 Tbsp of sugar. Simmer over medium heat for 5 minutes. This step allows the sugar to gently permeate the chicken, enhancing its natural sweetness and adding depth to the flavor.

Now, add all the prepared vegetables: carrots, potatoes, onions, and king oyster mushrooms. Pour in 1/2 cup (approx. 100ml) of soy sauce and let them simmer together.

Immediately sprinkle in 4 Tbsp of red pepper powder evenly over the ingredients. Cover the pot and simmer over medium heat for 15 to 20 minutes. Stir occasionally to ensure the chicken and vegetables are evenly coated with the sauce.

Check to ensure the chicken, potatoes, and carrots are fully cooked. Then, add the diagonally sliced red chili peppers, green chili peppers, and the roughly chopped green onion. Cook for a few more minutes.

Finally, stir in 1 Tbsp of minced garlic and a pinch of black pepper. Let it simmer for another moment until the flavors meld together. This completes your delicious Dakbokkeumtang!
