Basic Mayonnaise Sauce (The Perfect Sweet & Salty)

  • 30g mayonnaise
  • 6g granulated sugar

Spicy & Sweet Sriracha Mayonnaise Sauce (For a Zesty Kick!)

  • 30g mayonnaise
  • 6g granulated sugar
  • 1.5g fine chili powder (for color and mild heat)
  • 12g vinegar

First, let’s prepare the two special sauces. For the basic mayonnaise sauce, combine the mayonnaise and granulated sugar in a bowl. Whisk them together until the sugar granules are completely dissolved. This creates a wonderfully smooth and sweet sauce. For the sriracha mayonnaise sauce, add the mayonnaise, granulated sugar, fine chili powder, and vinegar to another bowl. Stir well until the sugar has dissolved. This sauce will have a slightly spicy and savory flavor profile. Having these sauces ready beforehand will save you time when assembling the sandwich!

Now, let’s get the bread ready for our sandwich. Melt a generous amount of butter in a frying pan over medium heat. Place the two slices of bread in the pan and toast one side until golden brown and slightly crispy, about 2-3 minutes. Be mindful of the heat to prevent burning the bread. Toasting the bread adds a delightful texture to the finished sandwich.

Let’s cook the bacon, one of the stars of this delicious egg sandwich! In a separate pan, lay out the bacon slices and cook over medium heat until they are nicely browned and crispy on both sides. Turn off the heat as soon as the center is slightly undercooked; the residual heat in the pan will finish cooking them perfectly. Place the slice of processed cheese on top of the cooked eggs.
