  • Beef brisket or soup-cut beef: 1 cup (approx. 150g)
  • Radish: 1.5 cups (approx. 250g)
  • Onion: 1/4 medium
  • Green onion: 1/3 cup (approx. 50g)

Broth and Seasoning
  • Water: 1.5L (approx. 6 cups)
  • Minced garlic: 1 Tbsp
  • Soy sauce for soup: 2 Tbsp
  • Fish sauce: 1 Tbsp (or anchovy sauce)
  • Ground black pepper: a pinch
  • Flower salt (for seasoning)

Cooking Instructions

Step 1

First, prepare the radish. Peel and wash the radish thoroughly, then slice it into roughly 3cm x 3cm cubes. It’s best to cut them slightly thick, as thinly sliced radish can break apart during cooking.

Step 2

Pat the beef dry with paper towels to remove excess blood. This helps keep the broth clear and reduces any gamey odor. Cut the prepared beef into bite-sized pieces (about 3-4cm).

Step 3

Wash the green onions and thinly slice them, including both the white and green parts. They will be added at the end to enhance the aroma.

Peel and thinly slice the onion. The natural sweetness of the onion will subtly infuse the broth, adding depth to its flavor.

Now, let’s stir-fry. In a pot or deep pan, combine 1 Tbsp of sesame oil and 1 Tbsp of cooking oil. Heat over medium heat. Add the sliced beef and stir-fry until the outside is just cooked and turns opaque. Searing the beef first helps to seal in its juices, making it more tender and flavorful.
