Main Ingredients
  • 1 bowl of Tteokguk tteok (rice cake for soup, approx. 150g)
  • 1 bowl of square fish cakes (approx. 100g, cut into bite-sized pieces)
  • 1 onion (thinly sliced)
  • 1/2 green onion (cut into large pieces)

Seasoning
  • 2-3 Tbsp sugar (adjust to taste)
  • 2 Tbsp gochujang (Korean chili paste)
  • 3 cups water (approx. 600ml)
  • 2 Tbsp soy sauce
  • 1 Tbsp gochugaru (Korean chili powder)

Cooking Instructions

Step 1

Hello everyone! Today, we’re making the beloved national snack, Tteokbokki, in a generous style inspired by Chef Baek Jong-won’s recipe. You can use either tteokguk tteok or regular tteokbokki rice cakes, and prepare plenty of them along with fish cakes. Chef Baek humorously calls adding onions to tteokbokki ‘amateur’, but if you enjoy a touch of sweetness, adding onions while cooking can make it delicious. (Note: The original Baek Jong-won recipe does not include onions or fish cakes.)

Step 2

First, rinse the tteokguk tteok under running water to remove any starch and soften the cakes. If the rice cakes are hard, rinse them and then place them directly into the pan.

Step 3

Place the tteokguk tteok in a pot. If you’re not using fish cakes, add 2 cups (approx. 400ml) of water. Since we’ll be adding fish cakes and onions, pour in 3 cups (approx. 600ml) of water generously.

Step 4

Now it’s time to add the seasonings that will determine the flavor of your Tteokbokki. For the basic seasoning, add 2-3 Tbsp sugar, 2 Tbsp gochujang, and 2 Tbsp soy sauce. Chef Baek used up to 4 Tbsp of sugar, but if you prefer less sweetness, starting with 2 Tbsp and adjusting to your preference is recommended. This ratio will create the most fundamental taste!

Step 5

Dissolve the gochujang well in the water so there are no clumps, then add the thinly sliced onions and let it cook. The onions will start to soften and release their sweetness.

Step 6

Once the onions are somewhat cooked, add the cut fish cakes and let them simmer together until the Tteokbokki and seasoning are fully combined. The fish cakes will absorb the sauce, making them even more delicious.

Step 7

To give the Tteokbokki a more appetizing color, add 1 Tbsp of gochugaru. If you like it spicier, you can increase the amount of gochugaru here or add some Cheongyang peppers. Personally, I think it would have been even tastier if it were a bit spicier!

Step 8

When the Tteokbokki turns a vibrant red and the sauce begins to thicken slightly, add a generous amount of the large-cut green onions. The fresh flavor of the green onions will enhance the Tteokbokki’s aroma. Simmer for another moment, and your delicious Tteokbokki is complete!

Step 9

This Baek Jong-won style Tteokbokki is made so quickly with simple seasonings! While I wished it was a bit spicier today, our whole family devoured it completely. If you love spicy food, try adding more gochugaru or Cheongyang peppers to adjust the heat.

Step 10

Today, we enjoyed a hearty meal with Tteokbokki, pre-made Kimbap with fried tofu, and boiled eggs, which my husband loves. Feel free to add your favorite toppings to make your meal even more abundant!
