We’ve added onions, shiitake mushrooms, and a special egg-enriched sauce, all inspired by Baek Jong-won’s recipe. This pork cutlet donburi, featuring a simple yet incredibly flavorful custom sauce, is truly a treat!
Main Ingredients- Pork cutlets (Tonkatsu) – 7 pieces (adjust to your preference)

- Scallion (green part) – 5 cm length
- Egg – 1 large
- Warm cooked rice – 1 serving
Signature Donburi Sauce Ingredients- Anchovy or Dashi broth – 1/2 cup (approx. 100ml)

- Mirin (or cooking wine) – 2 Tbsp
- Sugar – 1 Tbsp

Cooking Instructions
Step 1
First, it’s time to reheat your pork cutlets to make them perfectly crispy. Using an oven or an air fryer is the most convenient way to achieve a wonderfully crisp texture. If you don’t have these appliances, you can heat them in a frying pan over medium-low heat with a little oil, flipping them occasionally until golden brown and heated through. If you’re using frozen pork cutlets, you can cook them directly in the pan without thawing, over medium-low heat, to ensure they heat through and become crispy on the outside.

Next, prepare the vegetables for your donburi sauce. Thinly slice half an onion. Trim the stems from the 3 shiitake mushrooms and slice them into bite-sized pieces. Chop about 5 cm of the white part of a scallion. These vegetables will add wonderful flavor and texture to your dish.

Crack one large egg into a bowl. Whisk it thoroughly with a fork or chopsticks until the yolk and white are well combined and the egg mixture is smooth.

Now, let’s make the delicious donburi sauce. In a pot or frying pan, combine 1/2 cup (approx. 100ml) of anchovy or dashi broth, 3 Tbsp of soy sauce, 2 Tbsp of mirin, and 1 Tbsp of sugar. Add the thinly sliced onions, sliced shiitake mushrooms, and 1/2 Tbsp of minced garlic to the pot. Bring the mixture to a gentle simmer and cook until the vegetables are tender. This process allows the flavors to meld beautifully, creating a rich and savory sauce.

Once the sauce is simmering, add the chopped scallions. Finally, slowly pour the whisked egg mixture in a thin stream around the edges of the pot. After adding the egg, resist the urge to stir immediately. Let it sit for about 10 seconds, allowing the egg to gently poach and form soft curds without making the broth cloudy. This method creates a beautifully textured sauce with delicate egg ribbons. Keep the heat at medium-low.

To assemble, spoon warm cooked rice into a bowl. Arrange the crispy, reheated pork cutlets on top of the rice.
